Every year, shincha season is an eagerly anticipated event for green tea lovers around the world. This prized Japanese green tea is only available in limited quantities during the first two weeks of spring, and it's often sold out within a few weeks.
Shincha is made from freshly picked tea leaves that are quickly steamed and then rolled. This "deep-steamed" Shincha was steamed at a lower temperature to maintain the sweetness of the tea. As a result, the leaves are more tender and sweet, making for a delicious cup of tea without any bitter or astringency aftertaste.
If you're lucky enough to get your hands on shincha, be sure to enjoy it while it's at its best - during the brief window of time in early spring.
Brewing instructions:
2.5g of tea with 200ml of 175ºF water for about 45 seconds.
