Come on an adventure, a conversation around the intertwined story of fragrance and terroir-driven spirits... Indie Perfumers Guild member François Morrison of BCI/Bonneté and Perfumarie are excited about this new event.

Discover the world of rum with award-winning master distiller Daniel Baudin (Trois Rivières) and François Morrison as our guides. Learn about rhum agricole, New Grove rum (Mauritius Island), and other traditional rums from our experts. For instance, how does Daniel extract all the subtle aromas from the sugar cane to make Trois Rivières the most awarded rum in its class?

Daniel and François will share their passion for keeping the “naturalité”, nuances and “savoir-faire” in rum-making and discuss how terroir applies to this most diverse spirit in the world.

This session will be moderated by Perfumarie's Mindy Yang. Together, we will explore the similarities between the world of perfume and spirits, the "artisan way" that creates an emotion, and redefines what luxury and premium really mean.

Daniel Baudin

Daniel Baudin is a passionate creator and connoisseur of rhum. Working tirelessly for Trois Rivières and Maison La Mauny since 1991, Daniel was awarded Best Cellar Master in the world in 2018.       

For more than 30 years, Daniel and his team have been blending and aging the Grandes Cuvées and vintages of the Trois Rivières and Maison La Mauny rhums agricoles. Trained by a renowned rhum company as head of stocks and blends and continuing his growth within the Technical Center of Cane and Sugar of Martinique, he joined Trois Rivières in 1991 as Cellar Master. This newly created position was dedicated to the follow-up of distillations, blending, and aging following the AOC requirements established in 1996. Daily, Daniel Baudin is surrounded by 300 years of tradition to work with and honor; the cellars of Trois Rivières and Maison La Mauny carry many vintages, the oldest of which are still aging at over 20 years old. Work and passion recognized internationally, all Trois Rivières expressions have been awarded at the most influential competitions over the years including the Rum Trophy of the Year at the 2018 International Wine & Spirit Competition (IWSC) in London for the VSOP and most recently, three of Trois Rivières vintages and blends were awarded named amongst the best nine rhums in the world at the 2020 IWSC.

François MorissonParisian-born François Morisson’s first experience behind the bar occurred in Tokyo, Japan in 1989. Since then, he has worked in Paris and NYC for the last 3 decades from the opening of the Paris Hard Rock Café in 1991 to the re-opening of NYC iconic restaurant Pastis in 2019.

François has been consulting for various bars, clubs, and liquor brands, traveling the world in search of new flavors and spirits, producing numerous nightlife events and parties in private lofts and other venues along the way.

After having run the bar programs for Keith McNally and Stephen Starr, François assumed the role of the National On-Premise Strategic Accounts Vice-President for BCI, a fast-growing importing and branding company focusing on purely authentic wine and spirits.
