Anethole (also known asanise camphor) is anorganic compound that is widely used as aflavoring substance. It is a derivative ofphenylpropene, a type of aromatic compound that occurs widely in nature, inessential oils. It contributes a large component of the odor and flavor ofanise andfennel (both in the botanical familyApiaceae),anise myrtle (Myrtaceae),liquorice(Fabaceae),camphor, magnolia blossoms, andstar anise (Illiciaceae). Closely related to anethole is itsisomerestragole, abundant intarragon (Asteraceae) andbasil (Lamiaceae), that has a flavor reminiscent of anise. It is a colorless, fragrant, mildly volatile liquid.Anethole is only slightly soluble inwater but exhibits high solubility inethanol. This trait causes certain anise-flavoredliqueurs to become opaque when diluted with water, theouzo effect.
